The idea comes from food marketing expert Monica Olivieri, and food an beverage specialist Alberto Pagliara and their love for great Italian food, and particular devotion to one dish in particular. Carbonara is a dish that transcends national borders, proving to be as popular in London as it is in Rome.
The fact that British people have grown up with this dish is a testament to its enduring popularity, but as with the other Italian recipes (see baby food style Bolognese) its origin and original formula has perhaps been overlooked. So, while Carbonara has firmly established itself as part of the English menu, the addition of cream and mushrooms certainly provides a somewhat polarising twist on a classic.
This event focuses on the authentic and iconic carbonara dish, exploring the fundamentals of its traditional recipe. We see this as an educational event, bringing together Italian food and culture in support of local charities.
